Ingredients

  • ½ pound lean fresh pork loin, in 1 chunk
  • 3 tablespoons fish sauce
  • 2 tablespoons Plus 1 teaspoon sugar
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoon Caramelized Sugar (from other recipe)

Instructions

  1. Slice the pork ½ inch thick, then cut into pieces ½ inch wide and 2 inches in length. 
  2. Put the pork into a small saucepan; pour over the fish sauce, sugar, pepper, and caramelized sugar. 
  3. Turn the heat to high, stirring for about 3 minutes, or until the liquid comes to a boil. 
  4. Reduce the heat to medium, cover, and cook for about 15 minutes or until there are about 8 tablespoons of liquid left in the saucepan.
  5. Serve with rice.
