Makes 5qts

Ingredients

  • 6 eggs
  • 1½ c brandy
  • 1½ qt whole milk
  • 1 c sugar
  • ½ c dark rum
  • ½ c light rum
  • 3 c whipped cream

Instructions

  1. Separate eggs, save egg whites in fridge, beat yolks until very thick and light.
  2. Gradually add sugar beating constantly.
  3. Still beating, add brandy and rum gradually.
  4. Chill for 1 hour, stirring occasionally.
  5. Add milk.
  6. Gradually fold in whipped cream and stiffly beaten egg whites.
  7. Store in covered jars in refrigerator 1 day before serving.
