Thick ‘n Chewy Cookies
Makes about 80 cookies.
Ingredients
- ½ c (1 stick) margarine or butter, softened
- 1 c packed brown sugar
- 1 c granulated sugar
- 3 eggs
- 1 t Vanilla
- 2 c (1 lb.) peanut butter
- 4 ½ c quick-cooking oats
- 2 t baking soda
- 1 c M & Ms
- 1 c Raisins
- 1 c Semisweet Chocolate Chips
Instructions
- Preheat oven to 350°F.
- Beat butter, brown sugar, and granulated sugar in a large bowl with electric mixer until pale & fluffy.
- Beat in eggs, vanilla, and peanut butter until well blended.
- Mix oats with baking soda in a separate bowl.
- Stir oats mixture into dough until dough stiffens up.
- Stir in M & Ms, raisins, and chocolate chips.
- Shape into 1 inch balls, place three inches apart on a lightly greased cookie sheet.
- Flatten then with a spoon or your palm to a 2 inch diameter.
- Bake for 8-10 minutes.
- Cool on sheets on cooling racks for 5 minutes.
- Remove the cookies from the sheet and place them on cooling racks to cool completely.
