Sugar Cocoons
These are aka Mexican Wedding Cakes. Makes about 3 dozen.
Ingredients
- 1 c butter of margarine
- ¼ c powdered sugar
- 1 t vanilla
- 2 c flour (sifted)
- 1 c chopped pecans
Instructions
- Preheat oven to 350°F.
- Cream the butter, powdered sugar, and vanilla together and beat until fluffy.
- Stir in the flour and pecans.
- Shape into balls and place on ungreased cookie sheet.
- Bake for about 15 minutes.
- Roll cocoons in powdered sugar while still hot.
