Peanut Butter Balls
A variation on “Buck-eyes” that has rice crispies.
Ingredients
- 1 stick margarine or butter
- 2 cups peanut butter (if using natural, stir in jar to combine oil and butter before adding)
- 1 lb powdered sugar
- 3 cups rice cereal (Rice Krispies)
- 8 oz bar milk chocolate (or melting chips)
- 6 oz semi sweet chocolate chips (or melting chips)
- ½ cake (1.6 oz) paraffin wax (if not using melting chips)
Instructions
- Blend margarine, peanut butter, and powdered sugar together.
- Mix in rice cereal and roll into ¾ inch balls.
- Refrigerate for 4-6 hours (until hard and cold).
- Melt chocolate bar and chocolate chips together with paraffin wax in double boiler. Shave wax into strips with a paring knife so it mels easier and faster.
- Using a toothpick, fork, or spoon dip each ball in chocolate.
- Refrigerate for another 4-6 hours.
