Instructions
Note: These are sort of made up, because I didn’t write them down, only the ingredients. These instructions are meant to be used with an old style icecream machine, that uses a bucket of ice and salt.
- In a pot over medium low year, combine 1 pint milk, half and half, 2c of sugar, and vanilla until just steaming. Stirring often to avoid scorching.
- While the the mixture heats, add egg yolks and remaining 1c of sugar to a bowl, whisk until light in color.
- 1 laddle at a time, add the heated mixture to the eggs and whisk. Repeat until half the milk mixture is combined with the eggs.
- Add heated egg mixture into the pot, stir to combine. Keep heating until the mixture coats the back of a wooden spoon and does not run when you wipe some off the back of the spoon.
- Remove from heat, chill in fridge.
- Once chilled, pour into container inside of ice cream maker.
- Surround ice cream maker with ice and add salt on top.
- Add enough milk so the container is ¾ of the way full.
- Turn on ice cream maker, chill according to ice cream makers instructions
- Scoop ice ceream into a container, freeze until solid.
